選用優質西班牙脢頭肉,慢煮出軟腍入味嘅質感。表面掃上麥芽糖火炙,帶出陣陣焦香燶邊。我哋特別選用麥芽糖,係因為佢可以長時間承受高溫而不變苦,令外層可以燒出深褐色嘅脆皮效果——呢層精華係叉燒嘅靈魂所在

Our Char Siu starts with select Spanish pork collar, sous-vide until perfectly tender and flavorful. We finish it with a maltose glaze and a quick torching for those irresistible charred bits.

By using maltose, which holds up beautifully under prolonged high temperatures, enabling a rich, dark mahogany crust that delivers the ultimate BBQ experience

 

Reheating Instruction:

Air Fry for 7mins or unitl the crust is crispy and centre reached 75 degree celsius.
